Rosemary Parmesan Popcorn

While you could certainly stick to a drizzle of butter for a classic topping, the options to get
creative with other toppings are endless. Next up in combos to try? Rosemary Parmesan
Popcorn.
Thanks to the addition of finely grated parmesan, you’ll get a cheesy, melty snack with plenty of
flavor in every handful. It’s salty yet well-balanced, without the rosemary being too
overpowering. Trust us, it’s addictive.
Equipment
Solo Stove Fire Pit, Popcorn Maker
Ingredients
2/3 cup white popcorn kernels
6 tablespoons canola oil
4 tablespoons unsalted butter, melted
6 to 8 sprigs fresh rosemary, minced
1 cup finely shredded parmesan cheese
1/2 teaspoon salt, or more to taste
Step 1: Build a Fire
Build a fire in your Solo Stove fire pit. Start by burning 3-4 logs, or more for a larger fire pit,
allowing them to reduce down just about to a low to medium rolling flame with hot coals.
Step 2: Prep the popcorn kernels
Pour the oil into the popcorn maker. Add the kernels and toss to combine. This recipe calls for
two batches of popcorn. Make each separately in the popcorn maker, with 1/3 cup of popcorn
kernels and 3 tablespoons of canola oil each.
Step 3: Prep the rosemary butter
In a pot, melt the butter and add in the minced rosemary, reserving 1 teaspoon. Allow it to infuse
into the butter.
Step 4: Pop the popcorn
Holding the long handle of the popcorn maker, place the popper over the fire pit, two to three
inches above the flame ring. Hold the popcorn maker over the heat until you hear the oil sizzle
and the first kernel pop. Gently shake the popcorn maker over the heat until the kernels have
popped.
Step 5: Season the popcorn
Transfer the popcorn to a large bowl. Drizzle with the melted rosemary butter and top with
grated parmesan and salt to taste. Mix with your hands or a large spatula. Garnish the popcorn
with an additional sprinkle of parmesan cheese and the remaining fresh minced rosemary.
