Blackberry, Goat Cheese, and Honey

And by wanderlust, I mean she wants a big piece of land that she can wander around and tend to goats, cows, and various other adorable furry farm animals. If/when she accomplishes this dream, this is the pizza she is going to make. Take a bite, and you’ll be instantly transported to grassy fields with bees buzzing on the faces of blooming wildflowers, while the sun nestles over the neighboring hilltop.
Equipment
Ingredients
2 Tbsp. olive oil
1 ½ C low-moisture, whole milk mozzarella, shredded
2-3 oz. goat cheese
3-4 oz. fresh blackberries
Honey (flavored, if you dare. Lavender honey is a nice touch.)
Handful of arugula
1 lemon, juiced
2 oz. chopped pistachios
Build your Pizza:
1 - Stretch your dough to your desired size (Pi and Pi Prime can handle up to 13” pizzas).
2 - Use the olive oil as your base, and spread it over the crust until it’s about ½” from the edge of the dough.
3 - Sprinkle the mozzarella and goat cheese evenly across the top of the dough.
4 - Add as many blackberries as you’d like.
*TIP: these blackberries are prone to rolling off of the pizza when trying to launch it into the oven. To remedy this, I pinch the blackberries in half and place them individually so that the pinched side sits on the dough. This will also give the pizza a great color.
5 - Cook that sucker! Bake your pizza for approximately 90 seconds.
Garnish:
1 - Toss the arugula in lemon juice, then add a small handful to the center of the pizza.
2 - Drizzle with a good amount of honey, which will help tame the blackberries' brightness.
3 - Sprinkle your preferred amount of chopped pistachios over the pizza.
4 - Slice, and enjoy!
